Sweetwater Shiraz

Thomas Wines Sweetwater Shiraz is drawn from a vineyard at Belford's Sweetwater Ridge in the lower Hunter Valley. The site's red brown loams over limestone give the wine its distinctive floral lift.
Fermentation includes around 10% whole bunch fruit to add complexity. The ferment is initially allowed to warm, then cooled as it approaches its conclusion to achieve the desired colour and tannin structure.
The wine typically matures in premium French oak hogsheads for 15 months prior to bottling. In some vintages, a small proportion of American oak is also used.
Deep purple, Thomas Wines Sweetwater Shiraz is medium bodied and distinctly floral, perfumed red and blue fruits framing long, supple tannins. Cellaring potential is 10 years.
